Les recherches de Jitse Dijkstra s'intéressent surtout aux façons dont la religion a été transformée dans l'Antiquité tardive. Afin de répondre à cette question, il porte attention au contexte régional ou local de la transformation religieuse plus qu'à la narration idéologique et générale. Papyrologue de formation, il étudie l'Égypte de l'Antiquité tardive, sous toutes ses facettes dans une approche multidisciplinaire. Il vient juste de publier une monographie sur la transformation religieuse de la région de la cataracte première, au sud de l'Égypte, en particulier à l'île de Philae. En ce moment, il travaille à la publication des graffiti du temple d'Isis à Assouan où il a participé à des fouilles depuis 2001.
